I have been trying to continually improve the cooking of the pig. This is one reason I have been serving it with just hot sauce and vinegar - to really taste any improvements I have been making. I started by changing from charcoal to wood, in 2018 I paid closer attention to the cooking by monitoring lots of temps, and in 2019 I will be improving those curves to be a little more steady…
